DURUM SEMI-WHOLE WHEAT PASTA
 

 

Durum semi-whole wheat pasta obteined by San Carlo variety certificated oraganic and cultivated using byodinamic agriculture; transformed by a traditional miller with a water movement. Bronze wire-drawing and low oven dry temperature.

Senatore Cappelli durum wheat is characterized by a very intense amber yellow

seed, remarkable weight, high protein content which may reach 17% of the dry matter and by a high percentage of lipids, amino acids, vitamins and minerals, potassium, magnesium and selenium.

This variety was selected in Foggia (Puglia) in 1915 and the name was given to honor the Senator Cappelli of the Italian Kingdom, who in the lòate 800's supported the agrarian reforms for introducing selected varieties in agricolture, the most adaptable and fruitful.
