Type of yeast: Spontaneous with natural yeast fermentations.

Tasting: Rich ruby, complex on the nose with aromas of soft fruits, spices and cocoa. Elegant on the palate with delicate acidity, hints of mixed dried fruits combined with ripe tannins.

Recommended: with game, venison and red meat dishes, mature cheeses and ham.

To serve at: 16°-18° C
