CENTOPASSI Bianco SICILIA IGT
 

Centopassi Bianco is made with grapes from vineyards in inland Sicily over 400 meters above sea level.

It is dedicated to the ones who honor the memory of mafia victims through a daily engagement.

Variety: Catarratto, Grillo

Vineyard: Giabbascio (400 m.s.l.) in San Giuseppe Jato, Pietra Longa (500 m/slm) in Monreale

Vineyard pruning system: guyot

Planting density: 1,25 x 2,50 and 0,85 x 2,40

Harvesting: manual, September

Yield: 9 tons/ha

 

Vinification: soft pressing of grapes and fermentation at controlled temperature for 20 days

Ageing: in stainless steel vats for 6 months

Aging: At least one month in bottle before being put on the market
