Harvesting technique: manual, first ten days of September

Vinification: grape crushing-destemming and must fermentation at controlled temperature for 8-10 days

Maturation: in steel vats for about 6-8 months

Ageing: at least two months in bottle before marketing

Tasting: Intense ruby, strong, complex smell that starts with a thick mesh ofsweet and hot spices and develops through quince, cherry, leather, andhumus notes. Equally rich, round, encompassing, and soft taste,particularly due to ultra-fine tannins and a strong presence of savouryand fruity notes. Very long aftertaste, with recurring olfactory andtasting sensations.
