Grape variety: 100% Grillo
Type: Sicilia Indicazione Geografica Tipica
Harvesting technique: manual, last ten days of August
Vinification: soft grape crushing and must fermentation at controlled temperature for about 45 days.
Maturation: in steel vats for about 6 months, at least one month in bottle before marketing.
The vine rows of Grillo di Pietra Longa are exposed to the south on a sloping welldrained rocky soil, at quite a high altitude, with significant daily temperature changes. Grapes are picked in full maturation, but still with some acidity; such conditions are reflected in the wine through enhanced fruity notes and the fresh taste of this austere Grillo varietal. It is dedicated to Nicolò Azoti, a trade-unionist of Baucina murdered by the mafia, so that his memory may dwell forever in our conscience.
Tasting: Austere, with an imposing golden hue, enriched with bright greenish nuances. It has an impressively complex smell, with countless mineral notes that end up into a sharp flint stone scent, followed by notes of plane-tree flowers, white peach, and white pepper, enriched with sudden citrus surges. The taste is intense, deep, very fresh, mostly concentrated on fruity and mineral tones and with a pure and persistent savoury taste. It offers an endless closing sensation.
