This wine is made from 100% Corvina grapes, cultivated on a nearby hill “the Grola” at 450 m above sea level. The land is mainly limestone and the vine are grown on “pergola corta veronese” and “spalliera” systems. The grapes are selected manually and then lightly dried for 2 weeks before pressing. Fermentation takes place in thermo regulated steel tanks, in contact with the skins, for fifteen or so days, with a manual procedure called “follatura” which consists in pushing down the skins inside the wine, while the wine is fermenting in the tank. We do not add any selected yeasts nor sulphur dioxide. “R” is aged for nine months in French oak tonneaux, always in contact with its own yeasts. It is not filtered nor tartarically stabilized. This wine will evolve quickly, so for this reason, it should be drunk within one or two years. It is very good with red meats - braised or roasted, game and aged cheese’s.
We recommend serving between 14 and 16 C°.
