Grape variety: 100% Garganega.

 Characteristics: The grapes are harvested between 10 and 20 September, depending on the year. After the destemming, where the grapes are separated from the stalks, the juice flows naturally, with the assistance of gravity alone, and without any pressure being applied. The resulting must is clear, with a delicate flavour and with a good level of acidity, which keeps it stable until the end of fermentation. The must is fermented in thermoregulated steel vats at between 15 and 18°C for 7-10 days and afterwards in 25 hl oak casks until all the sugars have been converted. The wine is then aged slowly in wood for 10-12 months, during which time the unfiltered wine is left on the lees (yeast deposit).The wine is then bottled after being clarified and filtered. Ageing in the bottle is a stage that is important for ensuring the complete maturation of the wine. Liber, the resulting wine, has an extraordinarily fresh flavour, together with a notable aromatic complexity and a long-lasting taste, indicative of maturity and depth. It will acquire more elegance and become more refined with time. 

Drinking/Storage: So that its characteristics may be enjoyed at their best, the wine has already been aged in the bottle for one year. It should be stored in a dark, dry place, in a horizontal position. Serve between 10 and 12°C and consume within 3-4 days of opening the bottle.
