BIANCO VERONESE IGT Without addition of Sulfur Dioxide
 

This wine comes from 100% Garganega grapes, that grow in argillaceous land, cultivated with a vine training system known as “pergola corta veronese”. The grapes are manually selected during the harvest and arranged in small cases where they are left to rest for a light drying. Fermentation takes place in thermo regulated steel tanks, in contact with the skins, for fifteen or so days, with a manual procedure called “follatura”, which consists in pushing down the skins inside the wine, while the wine is fermenting in the tank. We do not add any selected yeasts nor sulphur dioxide.

“B” is aged for nine months in French oak tonneaux, always in contact with its own yeasts, periodically enlivened with a ‘battonage’. It is not filtered or tartarically stabilized. This wine evolves quickly, for this reason it should be drunk within one or two years. Very good with entry dishes or starters, such as, liver “alla veneziana” or with wholemeal rice “venere” with red chicory and shrimps. We recommend serving this wine at 10-12 C°.
