VINEYARD LOCATION: situated in S. Ambrogio di Valpolicella area , in one of the most important areas of Valpolicella.
SOIL: stony, clay.
VINE TRAINING SYSTEM: Pergola Corta Veronese.
GRAPES: Corvina 70%, Rondinella 30%.
HARVEST/ VINIFICATION: during the vintage we choose the ripest grapes and the ones good for drying After 5-6 months they rest in small woodencrate, grapes are crushed.
FERMENTATION: Fermentation takes place in steel tanks at controlled temperatures for a period which takes from 25 and 35 days. Then the wine is put in wooden barrels where it ages for a long period, from 3 to 4 years. During this period, different tasting of each barrique take place, in order to understand the wine life and only after careful consideration, it is decided the blend which will determine the final wine.
CHARACTERISTICS: our Amarone takes ten years of history, but only in 1999 we decided to put in the bottle the label Corte del Pozzo. The colour is hot and involves you strong red with violet reflexes. The high grade of alcohol with particular tastes as plums and blackberries and syrup of cherry, sometimes spiced, help to feel better the concentration of sugar during the wither. Our palate feels the alcoholic level temperaeted, fruited, dry but soft, that ends with a little bit of acidity driver by tanninic elements.
FOOD: we can appreciate those qualities if we drink this wine with red meats, games, cheese like parmisan. Very good also at the end of a dinner with cookies or dry biscuits.
SERVING TEMPERATURE: we suggest to drink it after two years it is in the bottle. Preserve the bottle in horizontal position, in dark places at 15°. Open the bottle a few hours before you drink and serve it at 18°C.
